Lemon Drizzle Cake

Instructions

1. Preheat oven to 175°C (350°F). Grease and flour a bundt pan.
2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
3. Add the softened butter, eggs, lemon zest, lemon juice, and buttermilk. Beat until well combined.
4. Pour batter into the prepared bundt pan and smooth the top.
5. Bake for 40-45 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
6. While the cake is baking, make the drizzle by combining sugar and lemon juice in a small saucepan. Heat until sugar is fully dissolved.
7. Once the cake is out of the oven, poke holes all over the warm cake with a skewer and then pour over the drizzle. The juice will sink in and the sugar will form a lovely, crisp topping.
8. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
