Ingredients

  • 500g rhubarb, trimmed and chopped
  • 100g dark soft brown sugar
  • 2 tbsp tomato purée
  • 100ml apple cider vinegar
  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp smoked paprika
  • 1½ tsp Kashmiri curry powder
  • ½ tsp mustard powder
  • ½ tsp ground ginger
  • ¼–½ tsp chilli flakes, to taste
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp honey
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 150ml water, plus more to adjust thickness
