Ingredients
- 500g rhubarb, trimmed and chopped
- 100g dark soft brown sugar
- 2 tbsp tomato purée
- 100ml apple cider vinegar
- 1 medium onion, finely chopped
- 2 garlic cloves, crushed
- 2 tsp smoked paprika
- 1½ tsp Kashmiri curry powder
- ½ tsp mustard powder
- ½ tsp ground ginger
- ¼–½ tsp chilli flakes, to taste
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp honey
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 150ml water, plus more to adjust thickness
